Chinese Chicken Salad Wraps

I am always on the lookout for healthy, not too time consuming recipes and my dear friend, Nat, must have read my mind and emailed me this a couple weeks ago. It is so yummy! I've had other versions of this salad before, but I had never thought of using it as a main dish by turning it into a wrap, genius! Plus, anything would be yummy wrapped in those delicious tortillas you cook yourself :)
Ingredients:
1 bag romaine or iceberg lettuce salad mix with red cabbage and carrot pieces
1/2 bunch green onions, chopped
1/2 c. slivered Almonds (I actually used sliced because that's what I had on hand)
1 package uncooked Ramen noodles, broken in pieces, without seasoning
3-4 chicken breasts, breaded, cooked and sliced (I use the uncooked frozen Tyson chicken, bake it and slice it but I'm sure any grilled or baked chicken would be great as well)

1 clove garlic
3/4 cup sugar
1/3 cup apple cider vinegar
1/4 cup purple onion
1 tsp dijon mustard
1/4 tsp salt
1/2 cup mayo
1/2 cup vegetable oil
1 Tbs Poppy seeds
1 package uncooked tortillas (found usually in the refrigerator section by the bagels), cooked

Directions:
Mix first five ingredients in a large bowl. Put all the rest of the items (except tortillas) in a blender and mix until combined well. (I usually try to make it in the morning so it has all day for the flavors to combine). Toss dressing lightly with dressing and place enough in the middle of the tortilla to be able to wrap it from two sides.  And that's it! Easy peasy :)

Serves 4-6. depending on how hungry you all are. Enjoy!
